Penne Pasta with Cullen's Chive & Leek Sausage

 Jerome's Penne Pasta 
with Cullen's Chive & Leek Sausage

Ingredients
2 tbsp Olive Oil
1 chopped Red Onion
2 Cloves Garlic chopped
8 Chive & Leek Sausages skinned & crumbled into chunks
A little pinch of Flour to dust meat in
1/2 tsp dried chilli flakes
1 tsp dried Oregano
1 tin of chopped Tomatoes
Salt & Pepper
Penne 350g

garnish with: chopped flat leaf parsley & freshly grated parmesan

To Cook:
If not already done so -skin the sausages and make chunks out of each one
(should make 3 per sausage)
Dust the chunks of sausage meat in flour.
In one pot cook the Penne Pasta for 10 mins or follow guide on pack, always season the pasta water.
In a large saucepan heat the olive oil, add the chopped onions and cook until start to brown.
Add the garlic.
Next add the sausage pieces, cooking for about 8 mins.
Add the chilli flakes and oregano.
Stir with a wooden spoon.
Add the tin of chopped tomatoes bring to the boil, then reduce and simmer until thickened.
Season to taste.
Check on the Penne - Cook until al dente & drain.Add the cooked sausages & sauce to the cooked penne mix well.
Serve with parsley & grated parmesan.
